Press release here:

Natural food and drinks for health-conscious consumers are the draw at South Asheville’s newest restaurant. The Green Sage Coffeehouse and Café opened at 1800 Hendersonville Road in the Dingle Creek Crossing shopping center, which is probably the most green and sustainable business in Asheville.
This is the second location for the Green Sage. The first restaurant opened in downtown Asheville three years ago.
“We are bringing our concept to the south side of town,” Green Sage Coffeehouse and Café President Randy Talley said.
The menu contains the same items as the downtown location, including fresh coffee, fresh smoothies, granola, pancakes, omelets, soups, salads and sandwiches. Both vegan and vegetarian options are available.
The 2,700-square-foot building was completely renovated and thermal solar panels were added to the roof, which should heat about 80 percent of the hot water. The restaurant includes 100 percent state-of-the-art LED lighting, an energy efficient lighting method. A custom-integrated heating system was installed as well as a waterless urinal.
There is also a composting and recycling program for the entire shopping center.
The restaurant plans to achieve a 4-star energy rating from the Green Restaurant Association. It would be one of only three 4-star-rated restaurants in the country.
