Mark Rosenstein, Asheville’s pioneer in the farm-to-table food movement as well as celebrated restaurateur and author, plans to offer three options in culinary immersion throughout summer and fall 2011.
The “What’s In The Box?” series focuses on Community Supported Agriculture (CSA) cooking and the peak of each season’s particular bounty, which includes not only the proper techniques of how to prepare, but also how to conserve and preserve the abundance. “Ultimately it provides the participant with a virtual roadmap on planning a week’s menu, said Rosenstein. It is fun, challenging and rewarding to get creative with what you have most on hand locally…for example, the surplus tomatoes in late summer or arugula and hard squash in the fall. It’s the practice of sustainable cooking at its best.”
If learning how to hand-churn your own ice cream, pressing apples for cider or mastering the art of cooking with a wood fire oven appeals, Rosenstein will also be teaching a three-part cooking series with a focus toward hands on instruction held at Wake Robin Farm. Known for their artisan bread creations, hosts Gail Lunsford and Steven Bardwell join in creating the unique experiential cooking environment.
Lastly, for the food enthusiast looking to venture further afield, “The Battle Of The Queens” is a weeklong, mid-October excursion amidst the Italian Alps in Aosta, Italy. Participants will hike, explore and learn the folklore of the area while experiencing the rustic food and wines particular to the region. Says Rosenstein, “We by-pass the usual tourist fare and penetrate to core of the authentic nature of the region through personal connections with people who love where they live, all the while making friends for a lifetime.”
