Good afternoon Jason,
I hope you are doing well. This email is intended to give you some more information about the butcher shop coming to Asheville which we talked briefly about in email a few months ago. Your blog definitely has its finger on the pulse of what’s happening around town, and I’d like to thank you for working so hard to keep us all plugged in! It would be awesome if you would post this on your blog. I’ve also attached a file of our logo if you want to use that as well. I’m greatly appreciative of any plug you can give.
My business associate, Karen Fowler, and I are opening a retail meat market this summer calledThe Chop Shop Butchery located at 100 Charlotte Street. This location is really exciting because we will be right beside Blue Water Seafood Company and City Bakery. We are also just a stone’s throw away from our friends at The Wine Studio of Asheville. It will be somewhat of a specialty food market corridor of locally owned businesses, something we think is really cool.
The Chop Shop is going to be a whole-animal butcher shop sourcing almost all of our meats from local farmers who exclusively use sustainable, all-natural, and ethical farming practices. This means they raise their animals without any hormones, steroids, or genetically modified feed. We are going to ensure transparency between the consumer, the farmer, and our shop. We want our customers to know where their food comes from and how it gets to their plate.
Our butchery will have everything from beef, pork, poultry, and lamb to bison and other specialty meats. In addition to making fresh sausages of all types, we are going to have a smokehouse on site allowing us to make our own smoked meats, sausages, and other charcuterie.
Finally, I want to mention our dedication to customer service. The Chop Shop will bring the neighborhood butcher shop back to Asheville. We want to build relationships with our customers so we can ensure consistent quality and meet their expectations. Asheville residents are very intelligent and passionate about their food. We want to provide a meat market where customers get exceptional service and can make knowledgeable decisions about their food while supporting the local economy and local farming.

Any chance of The Chop Shop carrying kosher meat? Could some of the local farms could have some of their meat certified as kosher by one of the local rabbis?

Hey Martin, I may be mistaken but I think the critters are already dead when they get there. I think maybe they come skinned and gutted too? Chop Shop is just carving useful, yummy stuff out of what's left over.
