During the 3 1/2 minute segment, the Rattigans will give a truffle-making demo. “The idea is to make it easy for anyone to be able to make in their kitchen without special equipment,” Jael said. It’s fitting, given the way she started down her career path.
About a decade ago, Jael, then a business student at the University of Minnesota, was struck with a notion that chocolate was her future while making truffles in her kitchen. Jael eventually loaded Dan and a handful of her worldly possessions into a vegetable oil-powered bus and struck out for Costa Rica. There, the Rattigans opened a restaurant called Bread and Chocolate.

The personable Rattigans did indeed show how easily one style of chocolate truffles can be made at home, those which consist of ganache rolled in nuts, cocoa, spices, or other dry coatings. But, alas, they didn’t show us how to enrobe our ganache fillings with those delicate hard chocolate shells that the pros use. Trade secret? Too difficult for us make-at-home foodies?
