Two years after opening the Chop Shop Butchery on Charlotte Street, owner Josh Wright will expand into the building next door. There, he’ll open a bar called Shambles with a menu by Tyler Cook, The Chop Shop’s head butcher.
The storefront, at 94 Charlotte Street, was left empty when Blue Water Seafood Company closed unexpectedly last year. Though Wright had considered targeting downtown for his bar concept, the closing of the fishmongers and restaurant gave him “food for thought.”
The food at Shambles will make use of the whole animal, in keeping with the Chop Shop’s philosophy of no animal part left behind. What’s fresh in the case is what will be on the menu that evening. “Pig, steer, lamb, whichever we’re using,” Wright said.

Looking forward to a nice neighborhood eatery and watering hole. Will be appreciated if you offer cheeses, soups and salads to expand beyond the meat emphasis.
Do you know’ is It a Bar that serves food or a restaurant that serves beer! Would love to have a alternative Pub in the area.
