PHO Fusion, a Vietnamese restaurant, will open in Downtown Market Nov. 20.
The restaurant will focus on Pho soup, which according to owner/manager Jesse Lirette, is the cornerstone of Vietnamese cooking.
Pho is traditionally broth, beef and noodles. PHO Fusion’s versions are garnished with fresh bean sprouts, lime, basil, peppers and cilantro and will be available vegetarian-style and with chicken.
Head chef Tru Phan is trained in Vietnamese cooking and has worked in Hyatt Hotels and at the Ritz-Carlton. He’s known for his blend of French and Vietnamese culinary traditions.

I was the one who posted a question about PHO Fusion a couple of weeks ago, so this is great news. I'm eagerly anticipating that opening, and hope the restaurant catches on.

grumpy, the Downtown Market is on South French Broad Avenue, across the street from the offices of the United Way of Asheville and Buncombe County.
