With no end in sight for the government shutdown, my coworkers at the Pisgah Inn and I suddenly find ourselves in dire need of employment. The Park Service has locked us out and I fear our season is finished. Our availability is immediate.
I am a culinary school [J&W] educated, experienced, FOH manager and fine dining server with bartending experience and an extensive knowledge of wine. Prior to the government shut-down I was a happy and successful FOH manager for the Historic Pisgah Inn, a national park concession located on the Blue Ridge Parkway outside of Asheville N.C. The Pisgah Inn boasts 51 rooms on the, “peak of the parkway”, with a restaurant, gift shop, banquet facilities, country store and attached 300 site campground. It is a high volume operation serving between 400 and 1200 covers per day, which caters to in-house guests, campers and the traveling public at large. In addition to a thriving banquet business, they prepare breakfast, lunch and dinner, seven days a week. I am/was the FOH/MOD responsible for breakfast and lunch service, and banquets, five days a week where we served between 300 and 700 covers per day.
I trained and managed a staff of over 40 servers, hosts and bus persons with an eye to fostering teamwork and giving outstanding customer service while at the same time maintaining the proper hourly staffing levels that volume dictated. I was also tasked with receiving, logging and keeping track of all the beer and wine. This included a daily physical inventory of all alcohol, which was then compared to our recorded daily sales. All outlets were then stocked to par levels and any vendor orders or adjustments to the virtual inventory made. As the 6:30am opening MOD, I was also the on-site supervisor for the BOH staff until the chef who served lunch and dinner arrived. My resume is current and my references are local.
