Of all the new restaurants slated to open in 2013, there’s one I’m following with particular interest: Seven Sows Bourbon & Larder, the restaurant from an impressive local foodie supergroup including Michael Moore of Blind Pig and formerly of the Admiral; Jason Caughman formerly of Pisgah Brewing; and Adam Bannasch of Zambra.

Co-owner Moore announced today on the Blind Pig Facebook page that the restaurant’s Grand Opening will be in March.

Seven Sows’ Facebook description says it will offer “Real Southern food. No gimmicks. No pop culture. No Pretension. Renaissance & Modernist Southern Cuisine.” Now it’s published a head-turning menu on its website.

Check it out here. It reads like a cross between the extreme/daring/envelope-pushing food choices of Blind Pig and the creativity of the Admiral. (No surprises there.)

Small plates include steamed Carolina oysters, barbecued prawns in smoked blue butter, pork & oyster pie, pig-head meatloaf, and chicken-wing skewers, ranging in price from $7 to $13.

A bar snack menu includes cracklins (pork rinds), chicken livers, waffle fries and roasted peanuts.

Entrees ranging from $16 to $28 include buttermilk fried chicken with creasy greens ($15); braised N.C. mountain goat with “Foxfire Brunswick Stew” and corn pone ($20); and pork spare ribs with pickled rhubarb, fried apples, and smoked bourbon lacquer ($23).

For dessert, enjoy a “moon pie” (hot fudge, toasted marshmallow and graham cracker with sea salt), or a Krispy Kreme hot cross bun.

Posted hours are below:

Tue-Thu: 5 p.m.-10 p.m.
Fri: 5 p.m.-1 a.m.
Sat: 10:30 a.m.-2 p.m., 5 p.m.-1 a.m.
Sun: 10:30 a.m.-2 p.m., 5 p.m.-10 p.m.

According to the restaurant’s website, Moore serves as executive chef while Bannasch is co-chef. Caitlyn McMillan is sous chef. Matt Hayes will manage the bar.

Look for Seven Sows at at 77 Biltmore Avenue in the former MoDaddy’s/Baja Cantina space.
