Hello Asheville!

Chef Joe Scully and I recorded our 12th episode of AVL Food Fans on November 17th, and it is now up posted and hosted, and available for listening to here:

Our special guests are Jane Anderson and Lucy Murphy from the Asheville Independent Restaurant Association! If you’ve ever wondered what exactly AIR is and does, they do a lot.

Jason Sandford from Ashvegas also joins us to do the Food News, and at the very end of the show, Chef Joe and I discuss “Front of the House / Back of the House Relations.”

In what we hope will be an ongoing discussion, we touch on the economic reasons that lie behind much of the FOH/BOH tension, and possible solutions like tip-sharing (did you know that it’s illegal in NC?), as well as abolishing the tipping system altogether! I also tell my famous “Kung Fu Chicken, No Cashews” story, which is the most extreme example of kitchen / dining room tension I have ever witnessed in my life. There was a knife. And kicking.

Stu Helm is an artist, writer, and podcaster living in Asheville, NC, and a frequent diner at local restaurants, cafes, food trucks, and the like.
