Hello Asheville!

Chef Joe Scully and I recorded our 12th episode of AVL Food Fans on November 17th, and it is now up posted and hosted, and available for listening to here:

http://www.spreaker.com/show/avl-food-fans

Our special guests are Jane Anderson and Lucy Murphy from the Asheville Independent Restaurant Association! If you’ve ever wondered what exactly AIR is and does, they do a lot.

Jason Sandford from Ashvegas also joins us to do the Food News, and at the very end of the show, Chef Joe and I discuss “Front of the House / Back of the House Relations.”

In what we hope will be an ongoing discussion, we touch on the economic reasons that lie behind much of the FOH/BOH tension, and possible solutions like tip-sharing (did you know that it’s illegal in NC?), as well as abolishing the tipping system altogether! I also tell my famous “Kung Fu Chicken, No Cashews” story, which is the most extreme example of kitchen / dining room tension I have ever witnessed in my life. There was a knife. And kicking.

Please Listen and check out past episodes on our web site! We’ve had over 4,700 listens so far, thanks to you guys!

Stu Helm is an artist, writer, and podcaster living in Asheville, NC, and a frequent diner at local restaurants, cafes, food trucks, and the like. His tastes run from hot dogs and mac ā€˜nā€™ cheese, to haute cuisine, and his opinions are based on a lifetime of eating out. He began writing about food strictly to amuse his friends on Facebook.
